    It is the first year we are presenting Johnny Alvarado and family's coffee. Alvarado family's Corazon de Jesus micro-mill founded in 2015 and their efforts and continuous improvement made them the 3rd place winner at CoE 2022. This Catuai cherries entered the floater separation system at the mill to sort out the floaters and rinse the cherries after harvesting. It was placed in a pile for 12 hours on the third day. After, they were on raised beds and moved around two times. It was placed in cement patios for ten more days until it reached 10.5% humidity.
